You may recognize the name Sheldon Simeon. He gained fame as a competitor on Bravo's Top Chef and continuously proves his prowess in the kitchen as the owner of Tin Roof in Maui. He's also the culinary mind behind the signature dishes served at the newly unveiled Pokeworks.

Chef Sheldon designs poke bowls like the spicy ahi, a rice bowl loaded with cucumber, green and sweet onion, ahi tuna, masago, sesame seeds, and Sriracha aioli. If you want to take control of your own meal, you can opt to design a dish yourself. Start by picking a base such as a rice bowl, a salad, or a "burrito" of sushi rice and roasted seaweed wrap. Then add a protein such as ahi or albacore tuna, salmon or scallops, shrimp or chicken, or organic tofu. Mix in extras such as diced mango or edamame, drizzle on the Pokeworks Classic dressing or wasabi aioli, and pile on toppings like avocado and wonton crisps.
